This Saint Patrick’s Day Irish Cream Coffee co*cktail Recipeis just so decadent and tasty, it’s almost like an indoors version of those fancy frosty co*cktails you sip on beaches in the Caribbean…and it totally reminds me of being in Ireland and sipping Irish coffees to my heart’s content. Though, this is the exact opposite, isn’t it? In Ireland, the weather was cold and dreary, so I sipped hot Irish Coffees to stay warm and not catch my death of cold.

How to Make These St Patricks Day Cupcakes

First, prepare the cupcake batter according to instructions on the box. Once prepared, pour the batter into lined cupcake tins and bake according to the instructions. Allow your plain white cake mix cupcakes to cool completely before you begin to frost them or the frosting will simply melt!

I recommend using these adorable Wilton Saint Patrick's Day cupcake liners!

Add your green food coloring to a tub of white frosting and mix it together really well. Place the colored frosting into a piping bag fitted with a 1M tip and then set it aside.

Use a melon baller to scoop a hole into the center of each cupcake and reserve the top cake piece.

Scoop a little more out and discard that cake.

Hint: Save these little leftover pieces of white cake and use it to make a few Saint Patrick's day cake pops! Check out this easy cake pops recipe!

Fill the empty cavity in your cupcakes with a little bit of Lucky Charms marshmallows and the rainbow sprinkles.

A little history about how Lucky Charms cereal came to be:

Can you believe that Lucky Charms cereal has been around for over 50 years?! I was born in 1978, and I can't remember a time when I wasn't lusting after this delicious sugary breakfast treat! I went to the General Mills website to find out more about the history of Lucky Charms.

Lucky Charms cereal debuted in 1964 with oat pieces in shapes of bells, fish, arrowheads, clovers and X’s and green clovers, pink hearts, orange stars and yellow moons marshmallows.

The cereal was created by product developer John Holahan. He developed the original prototype based on Cheerios cereal pieces and chopped up pieces of his favorite candy – Circus Peanuts.

Lucky the Leprechaun debuted in 1964 with one of the most expensive advertising roll-outs to that date featuring full colorads in Sunday comics and comic books plus animated ads featuring the charmin’ leprechaun.

In 1967, a kiss of sugar frosting was added to the oat pieces.

In 1983, purple horseshoes were added.

How to Make a White Cake From Scratch

If you are looking for a recipe to make the white cake and frsoting from scratch instead of using a box mix and prepared frosting, no worries! I know that a lot of people prefer to stay away from prepared foods and like the taste of homemade baked goods better.

  • 1cupgranulated sugar
  • ½cupunsalted butter
  • 2largeeggs
  • 2teaspoonvanilla extract
  • 1 ½cupsall purpose flour
  • 1 ¾teaspoonsbaking powder
  • ½cupmilk

Instead of baking the white cake mix according to the package directions, use these easy ingredients and following the recipe as normal after that part.

How to make Vanilla frosting from Scratch

  • 1 cup powdered sugar (do not sift before measuring)
  • 2 Tablespoons softened butter
  • ½ teaspoon vanilla
  • about 3 teaspoons milk

Instructions:

Place the powdered sugar, butter, and vanilla into a large bowl. With your electric mixer on low speed, combine these ingredients together for a few seconds. Slowly beat in the milk, a little at a time, until it has reached a nice, fluffy frosting consistency. Then beat it on high speed for about 15 seconds.

I love celebrating Saint Patrick's Day!

I have always loved celebrating the Saint Patrick's Day holiday, and we used to celebrate it with going out to eat at Bennigan's, back when they were still open in Miami! Now that they have closed down - as have almost all of our other Irish Pubs - literally EVERY SINGLE IRISH PUB IS NOW CLOSED!?!?! - we have to celebrate at home. I miss the days of the Saint Patrick's Day block party in South Miami. Good times, man, good times!

Have you ever been to Ireland?

If you're interested in reading about the week I spent in Ireland in 2017, check these articles out! I spent one day in Dublin, then headed off to a Ring of Kerry small group tour with Rabbies Tours - and it was amazing! My favorite part of the tour was the two days I spent in Killarney. Then I went back to Dublin, where I caught my flight home to Miami...and suffice it say, I left a little bit of my heart in Ireland and I can't wait to go back for a second, third, fourth...well, you get it! I want to go back as often as possible! As lovely as my tour through the Ring of Kerry was, I can't wait to see the rest of the country!
