  • 2 cups rolled oats be sure to use gluten-free, if needed
  • 1 cup walnuts or your favorite nuts or seeds
  • 1 cup unsweetened coconut flakes
  • 3 tablespoons 100% pure maple syrup or substitute with honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon kosher salt
  • 2 tablespoons Coconut oil melted (optional for thinning the texture if desired)

Instructions

  • Preheat the oven to 300° F (150° C).

  • In a large bowl, stir together the oats, walnuts, coconut flakes, vanilla extract, and maple syrup, making sure everything is evenly distributed.

  • Spread the mixture on a sheet pan in an even layer. Bake in the oven for 15 minutes. Allow the oats to cool for about 5 minutes.

  • Put the oat mixture into the food processor with cinnamon, nutmeg, and salt and process until smooth, scraping down the sides with a rubber spatula as needed. This can take up to 15-20 minutes, so be patient.

  • If you’d prefer a thinner consistency, add the melted coconut oil and process for a few more seconds to distribute.

  • The texture of this nut butter is mostly smooth with a tiny bit of grain. If you like a chunkier, thicker, texture, you can process for less time.
    Honey can be substituted for maple syrup if you prefer. Still adds sweetness without the maple flavor.
    Pecans can be substituted for walnuts. You can also add seeds, such as pepitas or flaxseed to add to the health benefits.
    The oil is optional but provides a creamier texture. You can substitute olive oil or avocado oil if you don’t have coconut oil. Vegetable oil will work too, but the other oils mentioned are much better for you.
    This can be made in a high-powered blender, such as a Vitamix or Blendtec. However, I find it much easier to scrape down the sides (which is necessary as the mixture will splatter) in the food processor.
    Store at room temperature for 1-2 weeks, or store in the refrigerator for up to 1 month.

    Toasting the oats, nuts, and coconut in the oven brings out their natural nutty and earthy flavors. The heat helps to release the oils and intensify the aroma and taste, resulting in a richer and more complex flavor profile.
    The granola butter will become firm and harder to spread when stored in the fridge. To make it softer, warm it in the microwave for a few seconds, or allow it to come to room temperature on the counter before using.
